Passionate about health, Claudia Pillow, Ph.D., is dedicated to helping families live cleaner, healthier, and happier lives. She empowers people who suffer from symptoms of chronic and autoimmune conditions with the knowledge and ability to heal their bodies from the inside out. This form of medicine is called Functional Nutrition and focuses on helping each individual find the best way to eat using food to maximize the potential for good health and reverse dysfunction, disease, and weight gain. Functional Nutrition emphasizes healthful eating guidelines personalized to each person’s genetics, lifestyle, environment, and goals.
Currently, Dr. Pillow is COO and Chief Nutrition Officer of Equilibrium Weight Loss and Longevity Clinics, where she is championing a new paradigm shift from the traditional weight loss model of a culture of “war on fat” to a mindset of “healing the body with food.” Prior to joining Equilibrium, Claudia was Chief Nutrition Officer and Director of Marketing for the gluten-free, vegan snack food company Hail Merry LLC, where she was instrumental in helping the startup become a leader in the natural foods market.
Claudia has studied and worked with food for her entire life. As a classically trained chef, she embraces a food philosophy grounded by the life sciences, nutrition, and health. In 2007, Dr. Pillow received her Ph.D. in health from Texas Women’s University. As part of her dissertation, she developed and tested a celiac disease school-screening tool. She also holds a science degree and an MBA from Rutgers University, and previously worked on the corporate side of the food industry, where she was a product manager for Dorman Roth Foods (now Sargento Cheese) and new product development manager at the beverage trendsetter, Soho Natural Beverages. Earlier in her business career, Dr. Pillow marketed first-aid kits for Johnson & Johnson.
In 2010, she co-authored Gluten-Free Good Health (Agate). She lectures about gluten intolerance and teaches gluten-free cooking and baking classes nationally. She was on the Gluten Intolerance Group of North America Board of Directors from 2006 to 2009. Dr. Pillow lives in Texas with her family and serves as a local resource for the North Texas GIG chapter.
